Sensory Description:
Well-dialed cups of Aril highlight the unique fermentation and processing combination of this Panamanian gesha. With an extended Carbonic Maceration combined with a washed finish, you’ll find this coffee to be exceptionally bright and lively compared to more delicate expressions of gesha. The result is a flavor profile of ripe tropical fruit like pineapple and mango, with some strawberry-like sweetness. You should expect a crisp, clear expression of fruit flavor rather than a syrupy or heavy-bodied one. The brightness and clarity in the cup also allows the floral and slightly citric notes to shine all the way through to the aftertaste.
Dial Notes:
Please note that I chose to dial this coffee on the Sibarist Fast filters, as it had a tendency to reach long draw-down times on standard filters. The fast filters also served to highlight the brightness and clarity of this coffee.
Under-extraction on Aril came across as too citric, reminding me of lemon juice without enough sweetness to balance it out. It also lacked a little body/texture, making the experience somewhat thin. The tasting notes were more along the lines of underripe tropical fruit, like mango that was still a little green. The finish on the coffee was quite quick, and didn’t have the floral lingering aftertaste of better dialed brews. For the next cup, I would grind finer.
Achieving over-extraction with the Sibarist Fast filters was pretty difficult, so I would be more on the lookout for under-extraction. However, over-extracted cups of Aril lost much of its signature brightness up front, resulting in a sweet but less vibrant flavor profile. The finish was a little flat and the cup picked up some bitter fruit characteristics like grape skin or grapefruit peel, which felt a little drying and astringent similar to tannins. For cups like this, I would grind a little coarser on the next brew.

Los Bellotos Bernardina are defined by their rich sweetness and creamy texture. There’s also a unique and pleasant contrast between the upfront flavor profile and the finish. At the front, you’ll notice more fruit-forward notes of concord grape, kiwi, and green apple – sweetness and malic acidity pairing well together. Towards the end and into the aftertaste, the flavors transition to more caramel, cola, and hazelnut-like notes.
