Sensory Description:
Well-dialed cups of La Guachoca have a nice creamy texture and reminded me of soft citrus flavors like orange, tangerine, and clementine. This combination of texture and sweet citrus results in a pleasant orange creamsicle-like flavor. There’s also an abundance of sugar browning flavors and sweet nuts like cola, date sugar, pecan, and cashew. Overall, you can expect a medium-heavy bodied coffee with a lot of sweetness and subtle citrus.
Dial Notes:
Under-extraction was pretty easy to do on this coffee, as it requires a pretty fine grind setting compared to most. These cups missed the sweetness and texture of better-dialed brews, resulting in recognizable tasting notes that just felt a little lacking. It reminded me of orange peel and cocoa, rather than their sweeter counterparts. Most of the flavor was in the front, leaving a somewhat muted aftertaste. If you encounter cups like this, try a finer grind setting on the next brew.
Over-extraction was actually somewhat difficult to achieve, requiring grind settings much finer than usual. Most of the cashew/pecan flavor shifted to the front, which made the cups lose a lot of the citrus notes and complexity of better brews. There was also a slightly drying and bitter aftertaste like dark chocolate and walnuts. In this instance, I would grind coarser for the next cup.
